Step-by-Step Instructions

  2. Toss cubed butternut squash with olive oil, salt, and pepper, then roast for 15-20 minutes.
  3. Trim and halve Brussels sprouts, add them to the baking sheet after 10 minutes of roasting the squash.
  4. Bring salted water to a boil and cook bow tie pasta until al dente, about 8-10 minutes.
  5. Heat olive oil in a skillet, add sliced smoked sausage, and brown for 5-7 minutes. Remove from the skillet.
  6. Sauté minced garlic in the same skillet for 30 seconds to 1 minute until fragrant, then stir in butter.
  7. Add drained pasta to the skillet with garlic butter, season with salt, pepper, and smoked paprika.
  8. Fold in roasted butternut squash, Brussels sprouts, and brown sausage, adding reserved pasta water as needed.
