- Cook the ground bacon in a skillet over medium heat until crispy, about 5-7 minutes. Crumble and set aside.
- In a large bowl, combine the ground beef, crumbled bacon, and panko. Pour in milk and mix gently to combine.
- In a separate bowl, whisk together the egg, diced onion, garlic, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Pour wet ingredients over the meat mixture and combine gently. It should feel slightly sticky.
- Take a scoop of the mixture, flatten it, place a cheese cube in the center, and roll into a ball.
- Preheat oven to 400°F (200°C). Bake meatballs on a parchment-lined baking sheet for 20-25 minutes till cooked through.
- Whisk together mayonnaise, ketchup, mustard, pickle relish, and vinegar for the burger sauce; refrigerate.
