Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Season the cod fillets with salt and pepper, then set them aside to come to room temperature.
  3. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add one finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in 2 minced garlic cloves and 1 teaspoon of fresh ginger, then add 1 can of coconut milk and bring to a gentle simmer. Stir in the juice and zest of one lemon.
  4. In a baking dish, lay the seasoned cod fillets and pour the coconut-lemon sauce over the fish, ensuring it's well coated.
  5. Bake for 20-25 minutes until the cod flakes easily with a fork and the sauce is bubbling.
