For the Fish
  • 4 fillets Cod Can be substituted with haddock or halibut
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Sauce
  • 1 tablespoon Olive Oil
  • 1 can Full-Fat Coconut Milk
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 cloves Garlic Minced
  • 1 teaspoon Ginger Grated
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Cornstarch Mixed with water to thicken the sauce
For Garnishing
  • 1/4 cup Fresh Cilantro Chopped
  • 2 slices Lemon
For Serving (Optional)
  • 2 cups Cooked Jasmine Rice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the cod fillets with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat and sear the cod fillets for 2 minutes on each side until lightly golden.
  4. Remove the cod from the skillet and add coconut milk, lemon juice, lemon zest, garlic, and ginger. Stir and cook for 1-2 minutes.
  5. Stir in fish sauce, brown sugar, and soy sauce, and simmer for 3-4 minutes.
  6. Mix cornstarch with water and whisk into the sauce to thicken for 2 minutes.
  7. Return the cod fillets to the skillet and spoon the sauce over them.
  8. Bake in the preheated oven for 10-12 minutes until the cod flakes easily.
  9. Garnish with cilantro and lemon slices before serving.
  10. Serve alongside cooked jasmine rice.
