- Preheat your oven to 400°F (200°C).
- Season both sides of the cod fillets with salt and pepper.
- Heat olive oil in a large ovenproof skillet over medium-high heat and sear the cod fillets for 2 minutes on each side until lightly golden.
- Remove the cod from the skillet and add coconut milk, lemon juice, lemon zest, garlic, and ginger. Stir and cook for 1-2 minutes.
- Stir in fish sauce, brown sugar, and soy sauce, and simmer for 3-4 minutes.
- Mix cornstarch with water and whisk into the sauce to thicken for 2 minutes.
- Return the cod fillets to the skillet and spoon the sauce over them.
- Bake in the preheated oven for 10-12 minutes until the cod flakes easily.
- Garnish with cilantro and lemon slices before serving.
- Serve alongside cooked jasmine rice.
