Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and greas a baking dish with olive oil.
  2. Season each cod fillet with salt and pepper on both sides.
  3. In a skillet, heat olive oil and sauté the diced onion until translucent.
  4. Add minced garlic and grated ginger to the skillet, stirring for 1-2 minutes.
  5. Pour in the coconut milk, lemon juice, and lemon zest, stirring well, then simmer for 3-4 minutes.
  6. Transfer cod fillets to the baking dish and pour the coconut lemon sauce over them.
  7. Bake for 20-25 minutes, checking for doneness.
  8. Let rest for a couple of minutes before serving with sides.
