- In a medium bowl, whisk together jerk seasoning, soy sauce, honey, olive oil, lime juice, minced garlic, and chopped onion.
- Add the chicken thighs to the marinade, cover, and refrigerate for at least 15 minutes.
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Place the marinated chicken thighs in the baking dish in a single layer and pour remaining marinade over the top.
- Scatter pineapple chunks around and on top of the chicken in the baking dish.
