  • 2 tablespoons Jerk Seasoning

  • 2 tablespoons Honey substitute with maple syrup for vegan option
  • 2 tablespoons Olive Oil can also use avocado oil
  • 3 cloves Garlic freshly minced
  • 2 tablespoons Lime Juice substitute with lemon juice in a pinch
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Topping
  • 1 cup Pineapple Chunks fresh or drained canned
  • 1 medium Onion yellow onion preferred
  • 1/4 cup Fresh Cilantro or Parsley optional garnish

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together jerk seasoning, soy sauce, honey, olive oil, lime juice, minced garlic, and chopped onion.
  2. Add the chicken thighs to the marinade, cover, and refrigerate for at least 15 minutes.
  3. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  4. Place the marinated chicken thighs in the baking dish in a single layer and pour remaining marinade over the top.
  5. Scatter pineapple chunks around and on top of the chicken in the baking dish.
  6. Cover with aluminum foil and bake for 25 minutes, then uncover and bake for an additional 20-25 minutes.
  7. Optional: Broil on high for 2-3 minutes for extra crispiness.
  8. Let chicken rest for a few minutes before serving, garnishing with fresh cilantro or parsley.
