- Preheat your oven to 375°F (190°C). Grease a baking dish lightly with butter or olive oil.
- Peel, devein, and butterfly the shrimp, leaving tails on for presentation. Keep them chilled.
- Melt butter in a skillet over medium heat. Add shallots and minced garlic and sauté until soft and fragrant, about 3-4 minutes.
- Remove skillet from heat, then stir in breadcrumbs, parsley, lemon juice, salt, and pepper. Mix until cohesive.
- Spread a layer of stuffing in the baking dish. Place butterflied shrimp on top, cut-side down, and spoon remaining stuffing over them.
