For the Salad
  • 2 heads Romaine Chopped or torn
  • 4 ears Corn Grilled, or use frozen if needed

  • 1 can Black Beans Drained and rinsed
  • 1 Avocado Pitted and thinly sliced
For the Dressing
  • 0.33 cup Light Ranch Dressing A yogurt-based dressing can be used as a lighter alternative
  • 3 Tbsp Buttermilk Can be substituted with milk mixed with lemon juice or vinegar

Method
 

Step-by-Step Instructions
  1. Cut chicken breasts into 1.5-inch cubes and marinate in 1/2 cup of BBQ sauce for at least 20 minutes or up to 8 hours.
  2. Preheat the grill to medium-high, around 350-400°F, and thread marinated chicken onto pre-soaked skewers.
  3. Grill chicken skewers for 15-18 minutes, turning occasionally and basting with remaining BBQ sauce.
  4. Grill corn for 10-12 minutes, turning frequently, until tender and charred. Cut kernels off the cob after cooling.
  5. Mix 1/3 cup ranch dressing with 3 tablespoons buttermilk and another 1/3 cup BBQ sauce.
  6. In a salad bowl, toss romaine with most of the dressing, then add in black beans, tomatoes, avocado, and corn. Serve skewers on top.
