  • 1 teaspoon garlic powder can substitute with fresh garlic cloves
  • 1 teaspoon smoked paprika
  • 2 tablespoons avocado oil can substitute with olive oil
For the Veggies
  • 1 cup green beans fresh or frozen
  • 1 tablespoon lemon juice fresh juice preferred
For the Base
  • 1 cup jasmine rice can substitute with brown rice or quinoa

Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of jasmine rice under cold water, then combine with 1.5 cups of water in a saucepan. Boil, then simmer covered for 15-18 minutes.
  2. Trim 1 cup of green beans and cut them in half. Prepare a baking sheet for roasting.
  3. In a bowl, mix 1/4 cup Dijon mustard, 1/4 cup honey, 1 tsp onion powder, 1 tsp garlic powder, and 1 tsp smoked paprika until smooth.
  4. Cut chicken into pieces, season with salt and pepper, and coat in the marinade. Refrigerate for 25-30 minutes.
  5. Preheat oven to 400°F. Toss green beans with 1 tbsp avocado oil, lemon juice, salt, and pepper. Roast for 20 minutes.
  6. Heat 2 tbsp avocado oil in a skillet over medium-high heat. Sear marinated chicken for 3-4 minutes per side until cooked through.
  7. Assemble bowls with jasmine rice, seared chicken, and roasted green beans. Drizzle with pan juices before serving.
