- In a medium bowl, combine mayonnaise, finely chopped dill pickles, yellow mustard, white vinegar, paprika, garlic powder, and onion powder. Mix thoroughly until smooth and creamy. Cover and refrigerate to enhance flavors.
- Heat a skillet over medium heat with a drizzle of olive oil. Sauté the chopped onion for about 3 minutes until translucent. Add the ground beef, breaking it apart, and season with salt and pepper. Cook until browned (about 6-8 minutes), draining excess grease.
- Warm the flour tortillas in the microwave for 15-20 seconds. Spread special sauce across each tortilla, then layer the cooked beef, shredded lettuce, and shredded cheddar cheese. Optionally add dill pickle slices.
- Fold in the sides of each tortilla and tightly roll from bottom to top. Slice in half for presentation and serve warm.
