  • 1 sheet Puff Pastry thawed store-bought
  • 1 tablespoon Milk for brushing
For the Filling
  • 100 grams Blue Cheese or feta for a milder taste
  • 50 grams Parmesan Cheese or Grana Padano as an alternative
  • 50 grams Walnuts or pecans for a nut-free option
  • 2 tablespoons Fresh Thyme Leaves or half amount dried thyme
For the Sweet Finish
  • 2 tablespoons Honey or agave syrup for vegan
  • to taste Sea Salt
  • to taste Cracked Pepper

Method
 

  1. Preheat your oven to 180°C (350°F) for a conventional oven, or 200°C (390°F) for a non-fan-forced model. Prepare a baking sheet lined with parchment paper.
  2. Lay thawed puff pastry sheets flat on a clean surface. Drizzle honey evenly across each pastry and gently score the pastry with a fork.
  3. Crumble blue cheese and grate Parmesan cheese evenly over the pastry. Sprinkle with chopped walnuts and fresh thyme leaves, and season with sea salt and cracked pepper.
  4. Roll up each pastry sheet into a tight log and cut each log in half lengthwise. Place the strips cut-side up on your prepared baking sheet.
  5. Twist each length of pastry into a coil shape, pinching the ends to secure. Arrange on the baking sheet and brush each piece lightly with milk.
  6. Bake for about 25-30 minutes until the pastry is golden brown and puffed up.
  7. Let cool for a few minutes, garnish with additional fresh thyme leaves, and serve warm.
