- Preheat your oven to 180°C (350°F) for a conventional oven, or 200°C (390°F) for a non-fan-forced model. Prepare a baking sheet lined with parchment paper.
- Lay thawed puff pastry sheets flat on a clean surface. Drizzle honey evenly across each pastry and gently score the pastry with a fork.
- Crumble blue cheese and grate Parmesan cheese evenly over the pastry. Sprinkle with chopped walnuts and fresh thyme leaves, and season with sea salt and cracked pepper.
- Roll up each pastry sheet into a tight log and cut each log in half lengthwise. Place the strips cut-side up on your prepared baking sheet.
- Twist each length of pastry into a coil shape, pinching the ends to secure. Arrange on the baking sheet and brush each piece lightly with milk.
- Bake for about 25-30 minutes until the pastry is golden brown and puffed up.
- Let cool for a few minutes, garnish with additional fresh thyme leaves, and serve warm.
