Ingredients
  

For the Pasta
  • 8 oz Short Pasta Any shape like macaroni or shells.
For the Cheese Sauce
  • 1 round Boursin Cheese Or use alternative creamy cheeses.
  • 1 cup Grated White Cheddar Cheese Use freshly grated for best results.
  • 1 cup Heavy Cream Can substitute with whole milk.
  • 1/2 cup Milk Adjust for desired sauce thickness.
  • 1/2 tsp Salt Adjust to taste.
  • 4 tbsp Unsalted Butter Used for roux and toasting breadcrumbs.
  • 2 tbsp All-Purpose Flour Cook to remove raw flour taste.
For the Topping
  • 1 cup Plain Breadcrumbs Panko can add extra crunch.

Method
 

Pasta Preparation
  1. Bring a large pot of salted water to a boil. Add 8 oz of short pasta and cook until al dente, about 7-8 minutes. Reserve ½ cup of pasta water, drain pasta, and set aside.
Cheese Sauce Creation
  1. In the same pot, melt 2 tbsp of unsalted butter. Whisk in 2 tbsp of all-purpose flour for 1-2 minutes. Gradually add 1 cup of heavy cream, whisking until smooth and thickened. Stir in Boursin and 1 cup of grated white cheddar until melted.
Combining Pasta and Sauce
  1. Fold the drained pasta into the cheese sauce. Adjust thickness with reserved pasta water or milk. Mix well.
Breadcrumb Topping
  1. Melt 2 tbsp of butter in a skillet. Add 1 cup of breadcrumbs, sautéing until golden brown, about 2-3 minutes.
Serving Preparation
  1. Transfer the pasta to a serving dish and top with breadcrumbs. Serve hot, optionally garnished with parsley.
