  • 1 cup Cucumber Diced
  • 1 cup Tomatoes Diced
  • 1 medium Jalapeño Finely chopped
  • 1 small Red Onion Finely chopped
  • 1 bunch Cilantro Chopped
For the Dressing
  • 1 cup Chunky Salsa Adjust to taste
  • 2 tablespoons Lime Juice Adjust to taste
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
For the Topping
  • 1 large Avocado Diced

Method
 

Step-by-Step Instructions
  1. Pat dry your cooked shrimp with a paper towel and cut into bite-sized pieces. Place in a large mixing bowl.
  2. Dice cucumber and finely chop jalapeño, tomatoes, and red onion. Toss them into the bowl with the shrimp.
  3. Add chopped cilantro to the bowl and fold the mixture together gently.
  4. Pour chunky salsa over the mixture and squeeze fresh lime juice on top. Toss everything until well coated.
  5. Sprinkle salt and black pepper to taste, mixing gently again.
  6. Before serving, add diced avocado and fold it into the salad carefully.
