- In a large mixing bowl, combine the shredded chicken with buffalo sauce and mozzarella cheese. Ensure the chicken is evenly coated with the sauce for a flavorful filling.
- Using your hands, shape the chicken mixture into 3-inch sticks and place on a parchment-lined baking sheet. Freeze for at least 30 minutes.
- Set out three shallow bowls: one with all-purpose flour, another with beaten eggs, and the third with panko breadcrumbs for easy breading.
- Coat each stick in flour, dip it into beaten eggs, then roll in panko breadcrumbs, pressing down to ensure they adhere.
- Heat about an inch of cooking oil in a frying pan over medium heat until it reaches 350°F.
- Fry the sticks in batches for 2-4 minutes per side until golden and crispy, turning with tongs.
