Ingredients

For the Filling
  • 2 cups Shredded Chicken Use store-bought rotisserie chicken for quick prep or freshly cooked chicken for maximum flavor.
  • 1/2 cup Buffalo Sauce Choose a brand like Frank's RedHot, adjusting for your heat preference.
  • 1 cup Mozzarella Cheese Opt for fresh or low-moisture mozzarella; consider pepper jack for spice.
For the Breading
  • 1 cup All-Purpose Flour This helps the coating stick to your chicken sticks.
  • 2 large Eggs Beaten eggs act as the binder.
  • 1 cup Panko Breadcrumbs For a light and crunchy coating; season with spices if desired.
For Cooking
  • 1 cup Cooking Oil Use canola oil or any high smoke point oil for frying.
For the Dipping Sauce
  • 1 cup Dipping Sauces Pairs well with classic blue cheese or ranch dressing.

  • Shallow bowls
  • Frying Pan

Method

Preparation Steps
  1. In a large mixing bowl, combine the shredded chicken with buffalo sauce and mozzarella cheese. Ensure the chicken is evenly coated with the sauce for a flavorful filling.
  2. Using your hands, shape the chicken mixture into 3-inch sticks and place on a parchment-lined baking sheet. Freeze for at least 30 minutes.
  3. Set out three shallow bowls: one with all-purpose flour, another with beaten eggs, and the third with panko breadcrumbs for easy breading.
  4. Coat each stick in flour, dip it into beaten eggs, then roll in panko breadcrumbs, pressing down to ensure they adhere.
  5. Heat about an inch of cooking oil in a frying pan over medium heat until it reaches 350°F.
  6. Fry the sticks in batches for 2-4 minutes per side until golden and crispy, turning with tongs.
  7. Transfer the fried sticks to a plate lined with paper towels to drain excess oil. Serve hot with your choice of dipping sauces.
