- In a large mixing bowl, combine the shredded chicken, buffalo sauce, and mozzarella cheese. Stir gently until all ingredients are evenly coated and well combined.
- Using your hands, scoop out portions of the chicken mixture and shape them into approximately 3-inch long sticks. Place each stick on a parchment-lined baking sheet, ensuring they are spaced apart. Freeze the formed sticks for at least 30 minutes.
- While the chicken sticks are freezing, set up your breading station with shallow bowls of flour, beaten eggs, and panko breadcrumbs.
- Once frozen, coat each stick in flour, shake off excess, dip in beaten eggs, then roll in panko breadcrumbs.
