Step-by-Step Instructions for Buffalo Chicken Mozzarella Sticks
  1. In a large mixing bowl, combine the shredded chicken, buffalo sauce, and mozzarella cheese. Stir gently until all ingredients are evenly coated and well combined.
  2. Using your hands, scoop out portions of the chicken mixture and shape them into approximately 3-inch long sticks. Place each stick on a parchment-lined baking sheet, ensuring they are spaced apart. Freeze the formed sticks for at least 30 minutes.
  3. While the chicken sticks are freezing, set up your breading station with shallow bowls of flour, beaten eggs, and panko breadcrumbs.
  4. Once frozen, coat each stick in flour, shake off excess, dip in beaten eggs, then roll in panko breadcrumbs.
  5. Heat enough cooking oil in a frying pan to cover the bottom, about 1/4 inch deep, to around 350°F.
  6. Carefully place a few sticks into the hot oil and fry for 2 to 4 minutes, turning until golden brown.
  7. Transfer the fried sticks to a plate lined with paper towels to drain excess oil. Serve them hot with your favorite dipping sauces.
