- In a large pot, heat 1 tablespoon of olive oil over medium-high heat until shimmering. Add 1 pound of diced chicken breast seasoned with Cajun seasoning, sautéing until the chicken is golden brown and cooked through, about 5-7 minutes.
- Once the chicken is cooked, reduce the heat to medium and stir in 2 minced cloves of garlic. Sauté the garlic for about 1 minute until fragrant.
- Now, add 1 cup of orzo pasta, 1 cup of heavy cream, and ½ cup of freshly grated Parmesan cheese directly into the pot. Stir well to combine.
- Increase the heat to medium-high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer for about 10-12 minutes.
- After simmering, taste the dish and adjust seasoning as needed.
- Remove the pot from heat and let the dish rest for a couple of minutes. Serve hot, garnished with extra Parmesan cheese.
