- In a mixing bowl, combine ground beef, salt, and pepper. Mix until just combined and shape into meatballs, about 1 to 1.5 inches in diameter.
- Heat a large skillet over medium heat, add olive oil, and brown the meatballs for about 5-7 minutes until golden.
- In the same skillet, add more olive oil if needed, and cook thinly sliced onions over medium-low heat for 20-30 minutes until caramelized.
- Add minced garlic and sugar to the caramelized onions, stir for 1 minute, then add warm beef broth and simmer for 5-10 minutes.
- Carefully add the browned meatballs back to the skillet, cover, and simmer on low for 10-15 minutes.
- Preheat the oven broiler. Sprinkle shredded Gruyère cheese over the meatballs and broil for 2-3 minutes until bubbling and golden.
