Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix gently until just combined.
- Lightly grease a 9x9-inch baking dish and press the meat mixture into the bottom. Spread remaining ketchup on top.
- Bake in the preheated oven for 20-25 minutes or until cooked through with an internal temperature of 160°F (70°C).
- Spread prepared mashed potatoes over the top of the baked meatloaf.
- Sprinkle shredded cheddar cheese and crumbled bacon over the mashed potatoes. Bake again for 10-15 minutes until cheese is bubbly.
- Broil for 1-2 minutes for a golden finish, keeping a close watch.
- Let cool slightly before slicing. Garnish with chopped green onions or chives before serving.
