Ingredients
  

For the Meatloaf Base
  • 1 lb ground beef 80% lean preferred
  • 1 cup breadcrumbs gluten-free if needed
  • 1 egg
  • 1/2 cup milk buttermilk adds flavor
  • 1 medium chopped onion finely chopped
  • 1 tsp garlic powder or use fresh minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce soy sauce as substitute
  • 1/2 cup ketchup divided use
For the Topping
  • 2 cups mashed potatoes homemade or store-bought
  • 1 cup shredded cheddar cheese or mozzarella/pepper jack
  • 1/2 cup crumbled bacon pre-cooked saves time
  • 1/4 cup chopped green onions or chives for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix gently until just combined.
  3. Lightly grease a 9x9-inch baking dish and press the meat mixture into the bottom. Spread remaining ketchup on top.
  4. Bake in the preheated oven for 20-25 minutes or until cooked through with an internal temperature of 160°F (70°C).
  5. Spread prepared mashed potatoes over the top of the baked meatloaf.
  6. Sprinkle shredded cheddar cheese and crumbled bacon over the mashed potatoes. Bake again for 10-15 minutes until cheese is bubbly.
  7. Broil for 1-2 minutes for a golden finish, keeping a close watch.
  8. Let cool slightly before slicing. Garnish with chopped green onions or chives before serving.
