Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Blanch or lightly steam the mixed vegetables until just tender, approximately 3–5 minutes. Transfer to ice water and drain thoroughly.
  3. In a saucepan, melt butter, whisk in flour to create roux, then gradually add warm milk, stirring for about 5 minutes until thickened. Stir in shredded cheeses and seasonings until melted and creamy.
  4. In a greased 9x13 inch casserole dish, layer cooked vegetables and pour cheese sauce over. Toss to coat evenly.
  5. Combine breadcrumbs with melted butter, sprinkle over casserole, then add additional shredded cheese on top.
  6. Bake in preheated oven for 30 minutes until golden brown and bubbly.
  7. Let cool for 10 minutes before slicing to serve.
