- Preheat your oven to 350°F (175°C).
- Blanch or lightly steam the mixed vegetables until just tender, approximately 3–5 minutes. Transfer to ice water and drain thoroughly.
- In a saucepan, melt butter, whisk in flour to create roux, then gradually add warm milk, stirring for about 5 minutes until thickened. Stir in shredded cheeses and seasonings until melted and creamy.
- In a greased 9x13 inch casserole dish, layer cooked vegetables and pour cheese sauce over. Toss to coat evenly.
- Combine breadcrumbs with melted butter, sprinkle over casserole, then add additional shredded cheese on top.
- Bake in preheated oven for 30 minutes until golden brown and bubbly.
- Let cool for 10 minutes before slicing to serve.
