Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine ricotta cheese, egg, grated Parmesan, minced garlic, basil, parsley, oregano, salt, and pepper. Stir until creamy.
  2. Trim zucchini ends and slice lengthwise into thin strips. Sprinkle with salt and pepper, roast at 400°F for 8 minutes.
  3. Heat olive oil in a skillet, add sliced mushrooms, season with salt and pepper, sauté for 5-7 minutes until golden.
  4. In a baking dish, combine sautéed mushrooms with tomato sauce, add red pepper flakes, and spread evenly.
  5. Take a zucchini strip, place a spoonful of ricotta filling at one end, roll tightly and place seam-side down in sauce.
  6. Sprinkle mozzarella over roll-ups, bake at 400°F for 10-15 minutes until cheese is melted. Broil for 1 minute for a golden crust.
  7. Let cool for 2-3 minutes before serving, perhaps with a salad or garlic bread.
