  • 1 teaspoon Sriracha adjust based on spice preference

  • to taste pinches Salt and Pepper use sea salt for enhanced taste
  • 1 tablespoon Oil (for cooking) use vegetable or olive oil
For the Salsa
  • 1 large Mango fresh for best flavor
  • 1/4 cup Cilantro or parsley if desired
  • 1/2 medium Red Onion or yellow onion as substitute
  • 1 medium Bell Pepper any color works
  • 1 number Lime use lemon if limes are unavailable
For the Creamy Sauce
  • 1/2 cup Mayo yogurt can be swapped for a lighter option
  • 1 number Avocado optional, but highly recommended
For Serving
  • 2 cups Rice white or brown based on preference

Method
 

Cooking Instructions
  1. In a mixing bowl, whisk together soy sauce, honey, sriracha, garlic powder, paprika, salt, and pepper until blended. Coat chicken with marinade and let it sit for 10 minutes.
  2. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes on each side until golden brown and juices run clear. Use a meat thermometer to check for 165°F.
  3. Chop fresh mango, red onion, and bell pepper into small pieces. Combine with cilantro and lime juice in a bowl. Toss until coated and set aside.
  4. In a small bowl, mix mayo, sriracha, and honey until smooth. Adjust sriracha for spice level as desired.
  5. Once chicken is cooked and rested, slice it. In bowls, layer rice, chicken, salsa, and optional avocado slices.
  6. Drizzle spicy mayo over the bowl and serve warm, enjoying the flavorful combination.
