  • 1 large Cucumber, diced English cucumbers are ideal
  • 1/4 cup Red Onion, finely chopped green onions can be used for milder flavor
  • 1/4 cup Fresh Parsley, chopped substitute with cilantro if desired
For the Dressing
  • 1/4 cup Olive Oil avocado oil can be used as an alternative
  • 1 medium Lemon, juiced fresh lemons are preferable
  • 1 tablespoon Honey maple syrup or agave nectar for vegan option
  • 1/2 teaspoon Salt adjust to taste
  • 1/4 teaspoon Black Pepper, freshly ground
  • 1/4 teaspoon Garlic Powder

Method
 

Preparation
