Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Gather ingredients and a suitable baking dish.
  2. In a mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Mix until smooth and marinate the chicken for at least 15 minutes.
  3. In a large pot, bring salted water to a boil. Peel and dice russet potatoes, then cook in boiling water for 15-20 minutes until fork-tender. Drain and set aside.
  4. Return drained potatoes to the pot over low heat. Add milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy, adjusting seasonings to taste.
  5. Place marinated chicken thighs in the baking dish skin-side up. Bake for 25-30 minutes until cooked through and golden-brown.
  6. Remove chicken from the oven and let it rest. Serve with smoked gouda mashed potatoes and drizzle with cooking juices.
