- Preheat your oven to 400°F (200°C). Gather ingredients and a suitable baking dish.
- In a mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Mix until smooth and marinate the chicken for at least 15 minutes.
- In a large pot, bring salted water to a boil. Peel and dice russet potatoes, then cook in boiling water for 15-20 minutes until fork-tender. Drain and set aside.
- Return drained potatoes to the pot over low heat. Add milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy, adjusting seasonings to taste.
- Place marinated chicken thighs in the baking dish skin-side up. Bake for 25-30 minutes until cooked through and golden-brown.
- Remove chicken from the oven and let it rest. Serve with smoked gouda mashed potatoes and drizzle with cooking juices.
