  • 1.5 cups Crushed Oreos about 15 cookies

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Using a food processor, crush the Oreos and peppermint candy until they form fine pieces.
  3. In a stand mixer, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs one at a time and then include the vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until combined.
  6. Fold in the crushed peppermint, Oreos, and chocolate chips using a spatula.
  7. Using a cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheets, spacing them at least 2 inches apart.
  8. Bake for 10 to 12 minutes, or until edges are lightly golden and centers are slightly underbaked.
  9. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring to a wire rack.
