- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Using a food processor, crush the Oreos and peppermint candy until they form fine pieces.
- In a stand mixer, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time and then include the vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until combined.
- Fold in the crushed peppermint, Oreos, and chocolate chips using a spatula.
- Using a cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheets, spacing them at least 2 inches apart.
- Bake for 10 to 12 minutes, or until edges are lightly golden and centers are slightly underbaked.
