Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the Cornish hens under cold water and pat them dry thoroughly with paper towels. Season the cavity of each hen with salt and pepper.
  3. In a small bowl, whisk together the apple cider, pure maple syrup, olive oil, and fresh thyme leaves. Reserve a portion for basting later.
  4. Place the Cornish hens breast-side up in a roasting pan, scatter sliced apples and onions if desired, and brush with the glaze.
  5. Roast the Cornish hens for 30 to 35 minutes, basting every 15 minutes with the reserved glaze.
  6. Once fully roasted, remove from the oven and let them rest for about 10 minutes before serving.
  7. Garnish the Cornish hens with fresh thyme and serve.
