- Rinse the Cornish hens under cold water and pat them dry thoroughly with paper towels. Season the cavity of each hen with salt and pepper.
- In a small bowl, whisk together the apple cider, pure maple syrup, olive oil, and fresh thyme leaves. Reserve a portion for basting later.
- Place the Cornish hens breast-side up in a roasting pan, scatter sliced apples and onions if desired, and brush with the glaze.
- Roast the Cornish hens for 30 to 35 minutes, basting every 15 minutes with the reserved glaze.
