Step-by-Step Instructions for Coq Au Vin
  1. Preheat your oven to 350°F (175°C).
  2. In your Dutch oven, heat olive oil over medium heat and cook the diced bacon until crispy. Set aside.
  3. Sear the seasoned chicken pieces in the same pot until browned, about 5 minutes per side.
  4. Sauté diced onion and carrot in the pot for about 5 minutes until fragrant. Add minced garlic and cook for another minute.
  5. Deglaze the pot with brandy (if using), followed by red wine and chicken stock. Bring to a gentle simmer.
  6. Return seared chicken and bacon to the pot with thyme sprigs, cover, and bake in the oven for 20-30 minutes.
  7. Sauté cremini mushrooms in butter until golden, about 8-10 minutes.
  8. Thicken the sauce with the flour and remaining butter mixture, adding pearl onions and simmering for another 10 minutes.
  9. Garnish with parsley and serve hot over mashed potatoes or crusty bread.
