Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9 x 5 inch loaf pan with parchment paper.
  2. In a medium saucepan, reduce apple cider over medium heat until halved to about ¼ cup.
  3. Cream unsalted butter and light brown sugar in a large mixing bowl for about 3 minutes.
  4. Add eggs and vanilla extract, mix until just combined.
  5. In a separate bowl, whisk together applesauce, Greek yogurt, and cooled apple cider.
  6. Combine all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg in another bowl.
  7. Mix wet and dry ingredients together until just combined, avoiding overmixing.
  8. Pour batter into prepared loaf pan, smoothing the top.
  9. Bake for 40-50 minutes until a toothpick comes out clean.
  10. Cool in the pan for about 10 minutes, then brush with melted butter and coat with cinnamon-sugar.
