  • 4 large Portobello Mushrooms cleaned and stems removed
  • 1 tablespoon Olive Oil extra virgin for enhanced flavor
For the Filling
  • 8 ounces Lump Crab Meat can substitute with cooked shrimp or lobster
  • 4 ounces Cream Cheese softened
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 cup Mayonnaise adjust based on preference
  • 1 tablespoon Dijon Mustard adjust for milder taste
  • 1 tablespoon Lemon Juice freshly squeezed for brightness
  • 1 teaspoon Garlic Powder or use freshly minced garlic
  • 1 teaspoon Old Bay Seasoning adjust to taste
  • to taste Salt & Black Pepper
  • 2 tablespoons Chopped Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Gently clean the portobello mushrooms and remove the stems.
  3. Drizzle olive oil over the mushroom caps and season with salt and pepper.
  4. In a mixing bowl, combine crab meat, cream cheese, mozzarella, Parmesan, mayonnaise, mustard, lemon juice, garlic powder, Old Bay seasoning, salt, pepper, and parsley until well mixed.
  5. Stuff each mushroom cap generously with the crab mixture.
  6. Bake in the oven for 20-25 minutes or until the mushrooms are tender and the topping is bubbly and golden.
  7. Allow to cool for a few minutes before serving, garnished with extra parsley.
