  • 1 cup Cheddar Cheese White cheddar preferred
  • 8 oz Cream Cheese Softened
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1 cup Ranch Dressing Prefer brands like Hidden Valley
  • 3/4 cup Kosher Dill Pickles Chopped
  • 1 cup White Beans Great northern or navy beans recommended
  • 1 teaspoon Garlic Powder
  • 1/4 cup Fresh Dill Chopped, plus extra for garnish
  • 1 tablespoon Pickle Brine

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine softened cream cheese, sour cream, garlic powder, and ranch dressing until smooth.
  3. Stir in chopped kosher dill pickles, white beans, half of the shredded mozzarella and cheddar, fresh dill, and pickle brine.
  4. Transfer dip mixture into a 7x10 inch baking dish, spreading evenly.
  5. Sprinkle remaining mozzarella and cheddar evenly over the dip, followed by the chopped dill pickles.
  6. Bake in the preheated oven for 21-23 minutes until cheese is bubbly and golden.
  7. Switch the oven to broil and broil for an additional 2-3 minutes for a crisp top.
  8. Garnish with additional fresh dill before serving. Enjoy with thick-cut potato chips or pita chips.

Notes

For a creamier dip, consider lightly mashing the white beans before mixing them in. You can also prepare the dip a day in advance.
