Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with olive oil.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onions and sliced mushrooms for about 5-7 minutes until translucent.
  3. Add minced garlic and cook for an additional minute. Fold in fresh spinach, allowing it to wilt for about 1-2 minutes.
  4. Remove from heat and season the mixture with salt, pepper, and Italian seasoning to taste.
  5. Pour shredded cooked chicken into the greased casserole dish. Layer the sautéed vegetable mix over the chicken.
  6. Pour heavy cream over the chicken and vegetables, then top with shredded mozzarella and grated parmesan cheese.
  7. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden brown.
