For the Dumplings
  • 12 Frozen Vegan Dumplings Check for gluten-free versions if needed.
For the Seasoning and Garnish
  • 1 tablespoon Sugar Alternative sweeteners can be used.
  • 2 tablespoons Soy Sauce Optional for gluten-free; use tamari as a substitute.
  • 1 teaspoon Chili Oil Adjust to spice preference.
  • 1/4 cup Cilantro Fresh herb for garnish; omit if not preferred.

Method
 

Cooking Steps
  1. Heat the oil in a heavy-bottomed pot over medium-low heat until shimmering.
  2. Sauté the onion and white parts of scallions for about 5 minutes until translucent.
  3. Add minced garlic and salt, cooking for another minute until fragrant.
  4. Stir in sliced mushrooms and sauté for about 5 minutes until softened.
  5. Mix in red Thai curry paste, sugar, and soy sauce, sautéing for 2-3 minutes.
  6. Pour in vegetable broth and simmer gently for about 10 minutes.
  7. Stir in coconut milk and simmer for an additional 5 minutes.
  8. Add frozen dumplings and cook on medium-low heat for 7 minutes.
  9. Serve hot, garnishing with chili oil, green scallions, and fresh cilantro.
