Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Blend until smooth.
  2. Fold in mini chocolate chips, reserving a few for later.
  3. Line a baking sheet with parchment paper. Scoop mixture into bite-sized portions and flatten slightly. Freeze for 1 to 2 hours.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave until smooth.
  5. Dip each frozen bite into the melted chocolate and place back on the baking sheet.
  6. Sprinkle reserved chocolate chips on top of each bite while chocolate is still soft.
  7. Return bites to the freezer for an additional 15 to 20 minutes to set the chocolate.
  8. Transfer the bites to an airtight container and store in the freezer for up to three weeks.
