- In a medium mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Blend until smooth.
- Fold in mini chocolate chips, reserving a few for later.
- Line a baking sheet with parchment paper. Scoop mixture into bite-sized portions and flatten slightly. Freeze for 1 to 2 hours.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave until smooth.
- Dip each frozen bite into the melted chocolate and place back on the baking sheet.
- Sprinkle reserved chocolate chips on top of each bite while chocolate is still soft.
- Return bites to the freezer for an additional 15 to 20 minutes to set the chocolate.
- Transfer the bites to an airtight container and store in the freezer for up to three weeks.
