Step-by-Step Instructions
  1. Peel and cube the potatoes, boil in salted water for 15-20 minutes until fork-tender; drain and mash with butter and warm milk.
  2. In a saucepan, melt butter and brown sugar, add carrots and water; cover and cook for 10-12 minutes until tender.
  3. Pat-dry chicken, season, and sear in a skillet with olive oil and butter for 4-5 minutes per side until golden brown.
  4. In the same skillet, sauté garlic, add chicken broth, cream, and Parmesan; simmer for 3-5 minutes until thickened.
  5. Return chicken to skillet, simmer for 2 minutes to meld flavors.
  6. Serve chicken with mashed potatoes and glazed carrots, drizzling extra sauce over them.
