- In a large pot, bring 4 cups of vegetable broth to a gentle simmer over medium heat. Stir in 3 tablespoons of red curry paste, ensuring it dissolves completely. Allow to simmer for 5 minutes.
- Pour in 1 can of coconut milk, stirring continuously. Reduce heat to low and let it simmer for another 5 minutes.
- Add 2 tablespoons of minced fresh ginger and 2 cloves of minced garlic. Toss in 3 cups of mixed greens and cook for about 3-4 minutes until the greens are wilted.
