For the Dumplings
  • 1 package Dumplings Pre-made dumplings can save time.
For Garnish
  • 1 bunch Fresh Cilantro Use green onions or crushed peanuts as alternatives.

Step-by-Step Instructions
  1. In a large pot, bring 4 cups of vegetable broth to a gentle simmer over medium heat. Stir in 3 tablespoons of red curry paste, ensuring it dissolves completely. Allow to simmer for 5 minutes.
  2. Pour in 1 can of coconut milk, stirring continuously. Reduce heat to low and let it simmer for another 5 minutes.
  3. Add 2 tablespoons of minced fresh ginger and 2 cloves of minced garlic. Toss in 3 cups of mixed greens and cook for about 3-4 minutes until the greens are wilted.
  4. Drop in pre-made dumplings and cover the pot. Cook according to package instructions, about 5-7 minutes, or until they float to the surface.
  5. Remove from heat and stir in the juice of one lime. Adjust seasoning if needed.
  6. Ladle into bowls and garnish with fresh cilantro. Serve immediately.
