  • 2 cloves Minced Garlic Fresh garlic is best.
For Creaminess
  • 1 cup Heavy Cream Use half-and-half or plant-based cream for a lighter version.
  • 1/2 cup Parmesan Cheese Nutritional yeast is a great dairy-free substitute.
For Seasoning

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart and cooking until browned, about 5 to 7 minutes.
  2. Add the chopped onion to the pot and sauté for about 3 to 4 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Pour in the canned diced tomatoes and chicken broth. Bring to a gentle simmer and stir occasionally for about 5 minutes.
  4. Add cheese tortellini and cook according to package instructions, about 5 minutes, until they float to the top.
  5. Stir in the chopped spinach and allow it to wilt in the broth for about 2 minutes.
  6. Mix in heavy cream and Parmesan cheese, warming for an additional 2 to 3 minutes without boiling.
  7. Season to taste with salt, black pepper, and optional crushed red pepper flakes. Stir well.
