- In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart and cooking until browned, about 5 to 7 minutes.
- Add the chopped onion to the pot and sauté for about 3 to 4 minutes until softened. Stir in minced garlic and cook for an additional minute.
- Pour in the canned diced tomatoes and chicken broth. Bring to a gentle simmer and stir occasionally for about 5 minutes.
- Add cheese tortellini and cook according to package instructions, about 5 minutes, until they float to the top.
- Stir in the chopped spinach and allow it to wilt in the broth for about 2 minutes.
- Mix in heavy cream and Parmesan cheese, warming for an additional 2 to 3 minutes without boiling.
- Season to taste with salt, black pepper, and optional crushed red pepper flakes. Stir well.
