  • 2 tablespoons pickling salt (Kosher salt) avoid table salt
  • 1 tablespoon sugar optional
Pickle Ingredients
  • 4-5 pieces pickling cucumbers known for their firm texture
  • 2-3 cloves garlic use fresh cloves
  • a handful fresh dill can use dill flower heads if available
  • 2 pieces bay leaves optional
  • 1 teaspoon dill seed optional
  • 1 teaspoon mustard seeds optional, for flavor complexity
  • 1 teaspoon coriander seeds optional
  • 10 pieces whole black peppercorns can be swapped with crushed black pepper
  • to taste red pepper flakes optional for heat

Method
 

Prepare the Pickles
  1. In a medium saucepan, combine vinegar, water, pickling salt, and optional sugar. Heat over medium heat, stirring until dissolved, about 3-5 minutes.
  2. While the brine cools, rinse cucumbers under cold water, trim ends, and cut into desired shape.
  3. In sterilized jars, divide garlic, dill, and any optional spices evenly.
  4. Pack cucumber slices tightly into jars over the flavorings, leaving about an inch of headspace.
  5. Pour the cooled brine over cucumbers, ensuring they're fully submerged. Seal jars and gently shake.
  6. Let jars cool at room temperature for about an hour, then transfer to the refrigerator.
