Ingredients
  

For the Coleslaw
  • 4 cups cabbage, finely shredded
  • 2 cups fresh apples, diced Use Granny Smith or Honeycrisp varieties
  • 1 cup dried cranberries
For the Dressing
  • 1 cup mayonnaise or Greek yogurt
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste
  • 2 tablespoons vinegar Adjust to taste
Optional Crunch
  • 1/2 cup walnuts or sunflower seeds Mix in just before serving
For Extra Flavor
  • 1 teaspoon celery seed
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Finely shred the cabbage and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  2. Wash and dice the fresh apples and combine with dried cranberries in a separate bowl.
  3. Whisk together mayonnaise (or Greek yogurt), honey (or maple syrup), and vinegar until smooth.
  4. Combine the cabbage, apple, and cranberry mixture, pour over the dressing, and toss until evenly coated.
  5. Fold in walnuts (or sunflower seeds) and sprinkle with celery seed or lemon juice for extra flavor.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
