Method
 

Preparation Steps
  1. In a mixing bowl, combine boneless skinless chicken thighs, vegetable oil, and salt. Let marinate for at least 10 minutes.
  2. Sprinkle cornstarch over the marinated chicken, mixing thoroughly to coat evenly.
  3. Preheat your air fryer to 450°F (230°C). Cook the chicken for 8 minutes, flip, then cook for an additional 5-6 minutes.
  4. Heat vegetable oil in a skillet, add garlic and ginger, sauté for 30 seconds, then add onion and bell pepper, cooking until tender.
  5. Whisk together ketchup, Shaoxing wine, rice vinegar, light soy sauce, brown sugar, and water. Pour over sautéed vegetables, letting it simmer to thicken.
  6. Combine the cooked chicken with the sauce and vegetables. Toss gently to coat and serve hot.
