Step‑by‑Step Instructions
  1. Combine fresh blueberries, sugar, lemon juice, and thyme in a medium saucepan over medium heat. Bring to a boil, then reduce to a simmer for 20 minutes until thick.
  2. Take two slices of sturdy bread, spread cooled blueberry compote on one slice, and add white cheddar and mozzarella cheeses. Top with another slice of bread.
  3. Heat a cast iron skillet, melt butter, and grill the sandwiches for 2-3 minutes until golden and cheese starts to melt.
  4. Flip the sandwiches, add more butter if necessary, and grill the other side for an additional 2-3 minutes until golden brown.
  5. Remove sandwiches, let them rest, cut in half, and optionally sprinkle with sea salt and thyme.
