- Combine fresh blueberries, sugar, lemon juice, and thyme in a medium saucepan over medium heat. Bring to a boil, then reduce to a simmer for 20 minutes until thick.
- Take two slices of sturdy bread, spread cooled blueberry compote on one slice, and add white cheddar and mozzarella cheeses. Top with another slice of bread.
- Heat a cast iron skillet, melt butter, and grill the sandwiches for 2-3 minutes until golden and cheese starts to melt.
- Flip the sandwiches, add more butter if necessary, and grill the other side for an additional 2-3 minutes until golden brown.
- Remove sandwiches, let them rest, cut in half, and optionally sprinkle with sea salt and thyme.
