Step-by-Step Instructions
  1. Prepare the Filling: In a large mixing bowl, combine 2 cups of cooked shredded chicken, 1 cup of cheddar cheese, 1/2 cup of cream cheese, and 1/4 cup of sour cream. Use a fork to mix until smooth and creamy.
  2. Season It Right: Sprinkle in 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of cumin, 1/4 teaspoon of chili powder, and add salt and pepper to taste. Stir thoroughly to incorporate evenly.
  3. Assemble the Taquitos: Lay a tortilla flat, spoon 2–3 tablespoons of filling on the lower third, fold sides, and roll tightly. Position seam-side down on a tray.
  4. Heat the Oil: Heat about one inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F to 375°F.
  5. Fry to Perfection: Carefully place taquitos seam-side down in the hot oil. Fry for 2–3 minutes until browned, then flip and fry another 2–3 minutes.
  6. Drain Excess Oil: Transfer cooked taquitos to a paper towel-lined plate to drain excess oil.
