  • 1 lb Ground Chicken Chicken thighs recommended for juiciness
  • 2 medium Zucchini Shredded and moisture extracted
  • 2 cloves Garlic Minced
  • 1 tbsp Fresh Chives Chopped, can substitute with green onions
  • 1 tsp Kosher Salt
  • 1 tsp Fresh Black Pepper Adjust to taste
  • 1 tbsp Oil for Cooking High smoking point oil recommended
For the Creamy Cilantro Sauce
  • 1 cup Fresh Cilantro Can substitute with parsley for milder flavor
  • 1 clove Small Garlic Adjust based on preference
  • 1 cup Mayonnaise Non-dairy option available
  • 1/2 cup Cottage Cheese Can be omitted for lighter sauce
  • 1 tbsp Distilled White Vinegar Adjust to taste

Method
 

Chicken Zucchini Poppers Instructions
  1. Grate the zucchinis and squeeze out moisture using paper towel. Set aside.
  2. Mix the squeezed zucchini with ground chicken, minced garlic, chopped chives, salt, and pepper. Form into six patties.
  3. Blend cilantro, garlic, mayonnaise, cottage cheese, and vinegar in a food processor until smooth. Chill in the fridge.
  4. Heat oil in a frying pan. Cook the patties for about 4 minutes per side until golden and cooked through.
  5. Remove the patties and serve warm with the cilantro sauce.
