Preparation
- In a large mixing bowl, gently combine lump crab meat, finely chopped fresh vegetables, breadcrumbs, and your choice of seasonings.
- Set this flavorful filling aside while you prepare your egg roll wrappers.
Assembly
- Lay an egg roll wrapper on a clean surface with one corner facing you. Place a generous tablespoon of the crab filling in the center.
- Fold the bottom corner over the filling, then fold in the side corners snugly. Roll it away from you tightly, sealing the edges with a little water.
- Repeat until all filling is used.
Cooking
- In a large frying pan or deep skillet, heat oil to 350°F (175°C).
- Carefully add the assembled crab cake egg rolls to the hot oil, frying in small batches for 3-4 minutes on each side until golden brown.
- Use tongs to turn them gently for even cooking.
Serving
- Remove the egg rolls from the oil and drain on paper towels.
- Allow them to cool slightly before serving, with an array of dipping sauces for a delightful appetizer.

Notes
For best results, use high-quality crab meat and maintain oil temperature at 350°F to achieve crispy texture. Freezing uncooked egg rolls is a great meal prep option.
