Salad Base
  • 2 cups Cucumbers Cut into bite-sized pieces
  • 1 cup Edamame Shelled
  • 1/4 cup Fresh Herbs (Cilantro or Parsley) Chopped
Dressing
  • 3 tbsp Olive Oil Or avocado oil
  • 2 tbsp Rice Vinegar Or apple cider vinegar
  • 2 tbsp Tamari Or soy sauce
  • 1 tbsp Sesame Oil Do not skip this!
  • 1 tbsp Maple Syrup Or honey, optional
  • 1 clove Garlic Minced
  • 1 tsp Ginger Freshly grated
  • 1 tbsp Chili Crunch Adjust to taste
Optional Toppings
  • 2 tbsp Toasted Sesame Seeds
  • 1/4 cup Chopped Nuts (Cashews or Peanuts)
  • 1 Avocado Diced For creamy richness

Method
 

Prepare Salad Base
  1. Wash the cucumbers thoroughly under cold water, cut into bite-sized pieces, and place in a large mixing bowl. Add shelled edamame.
Make Dressing
  1. In a small mixing bowl, whisk together olive oil, rice vinegar, tamari, sesame oil, maple syrup, minced garlic, grated ginger, and chili crunch until well combined.
Combine Ingredients
  1. Drizzle dressing over the cucumber and edamame mixture, and gently toss using salad tongs until evenly coated.
Season and Serve
  1. Taste the salad, adjust seasoning, and serve immediately or let it chill for about 30 minutes.
