Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface to about 1/8-inch thickness.
  3. Cut the rolled pastry into 8 equal squares and arrange them on the prepared baking sheet.
  4. In a small bowl, mix the beaten egg with a splash of milk to make the egg wash.
  5. On half of the pastry squares, layer slices of ham, cheese, and a thin layer of Dijon mustard.
  6. Sprinkle the fillings with salt, pepper, and any fresh herbs you're using.
  7. Place another pastry square on top of each filled square and seal the edges by pressing together.
  8. Brush the tops of the pastries with the egg wash mixture.
  9. Bake the prepared stacks in the preheated oven for 20–25 minutes until golden brown.
  10. Allow the stacks to cool slightly on a wire rack before serving.
