- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface to about 1/8-inch thickness.
- Cut the rolled pastry into 8 equal squares and arrange them on the prepared baking sheet.
- In a small bowl, mix the beaten egg with a splash of milk to make the egg wash.
- On half of the pastry squares, layer slices of ham, cheese, and a thin layer of Dijon mustard.
- Sprinkle the fillings with salt, pepper, and any fresh herbs you're using.
- Place another pastry square on top of each filled square and seal the edges by pressing together.
- Brush the tops of the pastries with the egg wash mixture.
- Bake the prepared stacks in the preheated oven for 20–25 minutes until golden brown.
- Allow the stacks to cool slightly on a wire rack before serving.
