Step-by-Step Instructions
  1. Begin by peeling and washing about 3 medium-sized potatoes thoroughly under cold running water. Grate them to have about 3 cups of grated potatoes.
  2. Take the grated potatoes, place them in a clean kitchen towel, twist the towel closed and squeeze tightly to remove excess moisture.
  3. In a large mixing bowl, combine the grated potatoes with shredded cheese, flour, beaten egg, salt, black pepper, and paprika if using. Mix until well incorporated.
  4. Shape the mixture into sticks about 3 inches long and 1/2 inch thick. Place them on a plate as you shape them.
  5. In a deep skillet, heat enough oil to reach 1-inch deep over medium-high heat until it reaches 350°F (175°C).
  6. Once hot, add the sticks in batches and fry for about 3-4 minutes on each side until golden brown.
  7. Remove the sticks with a slotted spoon and let them drain on paper towels.
  8. Optionally, sprinkle with fresh herbs and serve immediately with your favorite dipping sauces.
