- Begin by peeling and washing about 3 medium-sized potatoes thoroughly under cold running water. Grate them to have about 3 cups of grated potatoes.
- Take the grated potatoes, place them in a clean kitchen towel, twist the towel closed and squeeze tightly to remove excess moisture.
- In a large mixing bowl, combine the grated potatoes with shredded cheese, flour, beaten egg, salt, black pepper, and paprika if using. Mix until well incorporated.
- Shape the mixture into sticks about 3 inches long and 1/2 inch thick. Place them on a plate as you shape them.
- In a deep skillet, heat enough oil to reach 1-inch deep over medium-high heat until it reaches 350°F (175°C).
- Once hot, add the sticks in batches and fry for about 3-4 minutes on each side until golden brown.
- Remove the sticks with a slotted spoon and let them drain on paper towels.
- Optionally, sprinkle with fresh herbs and serve immediately with your favorite dipping sauces.
