  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 1 handful cilantro can swap with parsley or mint
  • 1/2 cup flour gluten-free flour for gluten-free option
  • 2 tablespoons olive oil for pan-frying
For the Avocado Cilantro Sauce
  • 1 medium avocado can use silken tofu for vegan option
  • 2 tablespoons lime juice can substitute with lemon juice
  • 1/2 cup yogurt non-dairy yogurt for vegan option

Method
 

Cooking Instructions
  1. Cook 1 cup of red lentils in 2 cups of water until soft, about 10-12 minutes.
  2. Combine cooked lentils with grated sweet potato, chopped onion, minced garlic, cumin, paprika, coriander, salt, pepper, and cilantro.
  3. Sprinkle in the flour and mix until slightly sticky.
  4. Let the mixture rest for 5-10 minutes.
  5. Heat olive oil in a skillet and shape the lentil mixture into patties.
  6. Fry patties for 3-4 minutes on each side until golden brown.
  7. Prepare the avocado sauce by blending avocado, cilantro, garlic, lime juice, and yogurt until smooth.
  8. Serve warm patties with avocado sauce.
