Zucchini-Feta Mixture
  • 2 medium zucchini Use fresh, locally-sourced for best flavor.
  • 1 cup feta cheese Can substitute with goat cheese or vegan cheese for a dairy-free option.
  • 1 large egg Acts as a binder; use flax egg for vegan version.
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup oats Optional for extra nutrition and texture.
Seasoning
  • 1/4 cup fresh parsley Can swap with dill or basil.
  • 2 cloves garlic Adjust according to taste.
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Baking
  • 2 tablespoons olive oil Can be replaced with other oils if preferred.

Method
 

Preparation
  1. Wash, trim, and grate the zucchini. Squeeze out excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine the drained grated zucchini with crumbled feta, beaten egg, breadcrumbs, optional oats, garlic, parsley, oregano, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into balls, approximately the size of golf balls, ensuring they are compact.
  4. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper. Place the balls on the sheet with space between them. Drizzle olive oil over the tops.
  5. Bake for about 20 minutes, turning halfway through for even browning.
  6. Let the balls cool for a few minutes before serving.
