- Wash lentils thoroughly under cold water until the water runs clear. Finely chop onion, and prepare diced tomatoes.
- Layer the ingredients in the slow cooker starting with lentils, followed by onions and diced tomatoes. Add chili powder and vegetable broth.
- Cover and set the Crockpot to low heat for 6 to 8 hours, allowing flavors to meld.
- Once cooked, stir the chili, adjust consistency and seasoning if needed.
- Serve in bowls, garnished with cilantro or avocado.
