  • 1 can Diced Tomatoes fire-roasted recommended
  • 1 medium Onion finely chopped
  • 2 tablespoons Chili Powder adjust to taste
  • 4 cups Vegetable Broth homemade for lower sodium

Step-by-Step Instructions
  1. Wash lentils thoroughly under cold water until the water runs clear. Finely chop onion, and prepare diced tomatoes.
  2. Layer the ingredients in the slow cooker starting with lentils, followed by onions and diced tomatoes. Add chili powder and vegetable broth.
  3. Cover and set the Crockpot to low heat for 6 to 8 hours, allowing flavors to meld.
  4. Once cooked, stir the chili, adjust consistency and seasoning if needed.
  5. Serve in bowls, garnished with cilantro or avocado.
