  • 1 tablespoon Sesame Seeds Toasting enhances flavor

Method
 

Preparation Steps
  1. Gather all the ingredients and rinse cucumbers under cold water.
  2. In a large bowl, combine sugar, toasted sesame seeds, crushed garlic, and chopped green onion. Whisk in soy sauce, rice vinegar, and chili oil, followed by sesame oil until well blended.
  3. Secure cucumber between chopsticks and make diagonal slices down the length for accordion cut.
  4. Transfer cucumbers to a bowl, sprinkle salt, and massage it into the cucumbers. Let sit for about 8-10 minutes.
  5. Rinse cucumbers to remove excess salt, pat dry, and toss with the marinade until well coated.
  6. Cover the bowl and let marinate in the refrigerator for at least 10 minutes before serving.
