Preparation Steps
- Gather all the ingredients and rinse cucumbers under cold water.
- In a large bowl, combine sugar, toasted sesame seeds, crushed garlic, and chopped green onion. Whisk in soy sauce, rice vinegar, and chili oil, followed by sesame oil until well blended.
- Secure cucumber between chopsticks and make diagonal slices down the length for accordion cut.
- Transfer cucumbers to a bowl, sprinkle salt, and massage it into the cucumbers. Let sit for about 8-10 minutes.
- Rinse cucumbers to remove excess salt, pat dry, and toss with the marinade until well coated.
- Cover the bowl and let marinate in the refrigerator for at least 10 minutes before serving.
