Preparation Steps
  1. Gather all the ingredients: cucumbers, green onions, soy sauce, rice vinegar, sugar, garlic, chili oil, sesame oil, sesame seeds, and salt.
  2. In a mixing bowl, combine sugar, sesame seeds, crushed garlic, and chopped green onions. Stir in soy sauce, rice vinegar, chili oil, and sesame oil.
  3. Spiral cut the cucumbers and place them in a large bowl.
  4. Generously salt the cucumber spirals and let them sit for 8 to 10 minutes.
  5. Rinse the cucumbers under cold water and pat dry with a towel.
  6. Drizzle the dressing over the cucumbers and toss gently.
  7. Chill the salad in the refrigerator for at least 10 minutes.
  8. Serve in a bowl, garnished with sesame seeds or green onions.
